Hitachi Blue Paper Wrought Iron Chef
Clad in early 1900s wrought iron, this core steel is the famed Hitachi Blue Paper, capable of extreme hardness. This knife is a beast, with an insanely hard edge. This means it will hold its sharpness for a long time when used with a decent wood cutting board, though the steel is more prone to chipping due to the very high HRC value.
An exceptional blade, it's best suited to someone with a good wooden cutting board given the ultra high performance core steel does not play well with plastic/glass/metal/stone boards. Fully convex and 9" long, it features a Zebrawood handle and blackwood bolster.
Best at: Staying sharp for basically forever
Worst at: Being used on anything but wooden cutting boards. Anything else will prob roll/chip the edge.
