Damascus Go-Cu-Mai Honesuki
I love a nice stout, nimble honesuki, and this one is no different. Clad in Damascus and featuring a copper shim, this fully convex, 6" honesuki is like a petty on steroids. It features a Wenge handle with continuous grain through a copper spacer.
Nice and burly but very nimble, this is as comfortable removing jalapeno seeds as it is deboning a chicken (as is the true purpose of a honesuki). It won't chop an onion very well, but is an excellent companion to a chef knife in the kitchen.
Best at: Getting into tight places and delicate work
Worst at: Chopping
